Crockpot Chicken Madeira

I am always on the search for fast, easy, healthy, delicious recipes to make cooking at home more realistic. Here is my crockpot take on the cheesecake factory chicken madeira. It was a big hit with my family, so I hope your family loves it too! I paired it with mashed potatoes and garlic cheese bread.
Ingredients:
4 boneless, skinless chicken breasts
1 cup Madeira wine (or Marsala wine as a substitute)
1 ½ cups chicken broth
1 cup heavy cream
1 pound fresh asparagus, trimmed
8 oz mushrooms, sliced
1 small onion, finely diced (I used a yellow onion due to its balanced sweetness and mild flavor)
3 cloves garlic, minced
2 tbsp olive oil
1 tbsp butter
Salt and pepper to taste
1 cup mozzarella cheese, shredded
Fresh parsley for garnish (optional)
Instructions:
Sear the Chicken: In a skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then sear on each side for about 2-3 minutes until golden. Set aside.
Sauté Vegetables: In the same skillet, add the butter, onions, garlic, and mushrooms. Sauté until the mushrooms are browned and the onions are soft, about 4-5 minutes.
Combine in Crockpot: Add the seared chicken breasts, sautéed vegetables, Madeira wine, and chicken broth to the crockpot.
Cook: Cover and cook on low for 4-5 hours or until the chicken is tender.
Add Asparagus and Cream: About 30 minutes before serving, add the asparagus and heavy cream to the crockpot. Continue to cook until the asparagus is tender.
Top with Cheese: Once everything is cooked, sprinkle mozzarella cheese over the top. Cover the crockpot and cook for an additional 5 minutes until the cheese is melted.
Serve: Garnish with fresh parsley if desired, and serve with mashed potatoes or over pasta to soak up the delicious sauce.
