Crockpot Taco Soup

Ingredients:

  • 1 pound ground beef (can switch out for other meats)

  • 1 packet taco seasoning

  • 1 packet ranch dressing mix

  • 1/2 white onion

  • 1 can black beans

  • 1 can kidney beans

  • 1 can diced tomatoes

  • 1 can whole kernel corn

  • 1 cup water


Instructions

  1. Brown the ground beef. Once fully cooked, drain and mix in taco seasoning.

  2. Add meat to crockpot.

  3. Mince 1/2 of a white onion. Add to crockpot.

  4. Mix in ranch dressing packet.

  5. Rinse can of black beans then add to crockpot.

  6. Drain can of corn and add to crockpot.

  7. Drain can of kidney beans and add to crockpot.

  8. Add can of diced tomatoes and then fill can to the top with water and add to crockpot.

  9. Cook on low for 6-8 hours or high for 2-3.


Notes


  • I usually add a few spices - whatever I am feeling that day. I usually add a dash of garlic salt, salt, and pepper. You can add more or less of each ingredient depending on how you like it.

  • I usually serve with sour cream, shredded cheese, tortilla chip strips and then make quesadillas. Super quick and fast - just throw it in the crockpot and let it cook all afternoon.
