Garlic Shrimp (Giovanni's copy cat recipe)

Ingredients
1 pound shrimp (medium or large, peeled or unpeeled, but tail on. Truck uses large, unpeeled shrimp)
1 stick of butter (I like salted)
1/4 cup vegetable oil (I prefer olive oil)
1 head of garlic, peeled and chopped (guesstimate with pre minced garlic - 2-3 tablespoons)
3/4 cup flour
2 tablespoons paprika
1/2 teaspoon cayenne pepper
1-2 teaspoons salt
1 lemon, cut into wedges or slices
Instructions
Combine flour, paprika, and cayenne pepper in a bowl and mix. Toss the shrimp in the mixture to coat.
Heat a large skillet over low heat.
Add the butter, oil, and garlic, and cook for 3-5 minutes.
Increase heat to medium and add the shrimp in a single layer. Cook for 3-4 minutes on one side, then turn the shrimp and cook for 3-4 minutes on the other side.
Add salt and stir. Cook for another 1-2 minutes.
Squeeze some of the fresh lemon juice over the shrimp to zest up the flavor.
Serve immediately with a side of white rice and a lemon wedge.
Notes
I typically use frozen shrimp. Keep the shrimp frozen until ready to use. I will pour the shrimp into a strainer and run hot water over the shrimp to thaw. This way your shrimp is wet and the flour mixture will stick/coat the shrimp well.
I usually double the recipe, and cook each batch separately to ensure the shrimp are single layer in the pan.
Save the extra garlic sauce and pour onto your rice. You can also pour onto other meats (my family likes to eat this recipe with tri-tip).
