Garlic Shrimp (Giovanni's copy cat recipe)

Ingredients

  • 1 pound shrimp (medium or large, peeled or unpeeled, but tail on. Truck uses large, unpeeled shrimp)

  • 1 stick of butter (I like salted)

  • 1/4 cup vegetable oil (I prefer olive oil)

  • 1 head of garlic, peeled and chopped (guesstimate with pre minced garlic - 2-3 tablespoons)

  • 3/4 cup flour

  • 2 tablespoons paprika

  • 1/2 teaspoon cayenne pepper

  • 1-2 teaspoons salt

  • 1 lemon, cut into wedges or slices



Instructions

  1. Combine flour, paprika, and cayenne pepper in a bowl and mix. Toss the shrimp in the mixture to coat.

  2. Heat a large skillet over low heat.

  3. Add the butter, oil, and garlic, and cook for 3-5 minutes.

  4. Increase heat to medium and add the shrimp in a single layer. Cook for 3-4 minutes on one side, then turn the shrimp and cook for 3-4 minutes on the other side.

  5. Add salt and stir. Cook for another 1-2 minutes.

  6. Squeeze some of the fresh lemon juice over the shrimp to zest up the flavor.

  7. Serve immediately with a side of white rice and a lemon wedge.



Notes


  • I typically use frozen shrimp. Keep the shrimp frozen until ready to use. I will pour the shrimp into a strainer and run hot water over the shrimp to thaw. This way your shrimp is wet and the flour mixture will stick/coat the shrimp well.

  • I usually double the recipe, and cook each batch separately to ensure the shrimp are single layer in the pan.

  • Save the extra garlic sauce and pour onto your rice. You can also pour onto other meats (my family likes to eat this recipe with tri-tip).
